Ozawa San at the sharpening stone, Seki.

The hands that make it

Seki. Nearly eight hundred years of blade-making.

Seki, in Gifu, has forged blades since the thirteenth century, first swords, then kitchen knives. The workshop we work with there forges five of our six lines.

The handle is made in Poland: a stabilised maple burl body and a bog oak ferrule, meeting the blade at a hand-fitted copper ring in an octagonal profile.

Questions

Frequently asked.

All FAQs

Is it dishwasher safe?
No. Heat and detergent dull the edge, the blade knocks against everything else, and water gets into the handle. Hand wash and dry it straight away with a soft towel.
How often will I need to sharpen it?
Used most days on a wooden board, a proper session on a 1000/6000 whetstone three or four times a year is usually enough. Skip the honing rod: on hard Japanese steel it can chip the edge. If you would rather not learn the stone, send it to us and we sharpen it for the life of the knife; you cover the shipping both ways.
Can I use it to cut meat?
Boneless meat, yes, cleanly. For anything with bones, use a heavier Western knife: hard steel is sharp but more brittle, and twisting through bone chips the edge.
How long does shipping take?
In-stock orders leave us within 1–2 business days. Handcrafted pieces follow the processing time shown with the handle colour. Transit is usually 2–7 business days within Europe and 6–21 days to the US and the rest of the world.
What if it isn't right for my kitchen?
You have 100 days. Cook with it, see how it sits in your hand, and if it isn't right, send it back in its original condition and packaging for a full refund.
