The Blades: Sharpness, Versatility and Tradition

The blades in this Japanese kitchen knife set are handcrafted by skilled Japanese blacksmiths in Sakai, Japan with premium Japanese AUS10 stainless steel. AUS10 is a stainless steel with a high carbon content, making it harder than most stainless steel types. With AUS10, you get the hardness of a carbon steel but the corrosion resistance of stainless. Hence, AUS10 steel offers an excellent balance between toughness, durability, and razor sharpness. The blades have a Rockwell Hardness rating (HRC) of 62, which means the edge stays noticeably sharper for longer, so you won’t have to sharpen them often. They are forged with 46 layers of Damascus steel, which is legendary for its plasticity, hardness and distinctive patterns.

The hands that make it

Seki. Nearly eight hundred years of blade-making.

Seki, in Gifu, has forged blades since the thirteenth century, first swords, then kitchen knives. The workshop we work with there forges five of our six lines.

The handle is made in Poland: a stabilised maple burl body and a bog oak ferrule, meeting the blade at a hand-fitted copper ring in an octagonal profile.

The hands that make it

Sakai. Six hundred years of blade-making.

Sakai, in Osaka, is the birthplace of the traditional Japanese kitchen knife, a craft passed down for six hundred years from the methods used to forge samurai swords. KYU is forged there by a master blacksmith whose family has been at this work since 1927. We make his blades under the name Sakai Kyuba.

The steel is AUS10, folded into 46 hammered Damascus layers and hardened to HRC 62. Each blade passes through around two hundred and twenty steps over roughly three months; the hammering, finishing and sharpening are done by hand.

Sakai. Sechshundert Jahre Klingenschmiedekunst.

I am happy to provide a positive review for the Sakai Kyuba Knife Set. This knife set is a testament to Japanese craftsmanship and is a must-have for any serious chef or cooking enthusiast.

The knives in this set are beautifully crafted and made from high-quality materials, including VG-10 steel for the blades and black pakkawood for the handles. The blades are incredibly sharp and retain their edge well, making cutting through meats, vegetables, and other ingredients a breeze. The handles are also comfortable to grip and provide a good balance to the knives.

One of the standout features of this knife set is the attention to detail that has been put into every aspect of its design. From the intricate patterns on the blades to the elegant curves of the handles, each knife is a work of art in its own right. Questions

Frequently asked.

All FAQs

Is it dishwasher safe?
No. Heat and detergent dull the edge, the blade knocks against everything else, and water gets into the handle. Hand wash and dry it straight away with a soft towel.
How often will I need to sharpen it?
Used most days on a wooden board, a proper session on a 1000/6000 whetstone three or four times a year is usually enough. Skip the honing rod: on hard Japanese steel it can chip the edge. If you would rather not learn the stone, send it to us and we sharpen it for the life of the knife; you cover the shipping both ways.
Can I use it to cut meat?
Boneless meat, yes, cleanly. For anything with bones, use a heavier Western knife: hard steel is sharp but more brittle, and twisting through bone chips the edge.
How long does shipping take?
In-stock orders leave us within 1–2 business days. Handcrafted pieces follow the processing time shown with the handle colour. Transit is usually 2–7 business days within Europe and 6–21 days to the US and the rest of the world.
What if it isn't right for my kitchen?
You have 100 days. Cook with it, see how it sits in your hand, and if it isn't right, send it back in its original condition and packaging for a full refund.
What if it isn't right for my kitchen?
You have 100 days. If it isn't right, send it back unused, in its original condition and packaging, for a full refund. Email us first and we'll guide you through it.
Can I return a sharpening stone?
Whetstones are fragile precision tools, so once a stone has left us we can't refund or exchange it, including for transit damage. Please check yours as soon as it arrives and report any manufacturing defect within 24 hours of delivery, with clear photos.

Fragen

Häufig gefragt.

Alle FAQs

Ist es spülmaschinenfest?
Nein.
