Every Oishya set is three knives from a single line, matched and boxed together. Each line offers two compositions:
- KATA — Bunka · Nakiri · Petty or Santoku · Nakiri · Petty
- RYU — Santoku · Nakiri · Petty or Gyuto · Nakiri · Petty
- KYU — Santoku · Nakiri · Petty or Gyuto · Nakiri · Petty
NIJI, SHIN and the PAN bread line are sold as individual knives only.

A note on care
A set arrives in one hand-finished wooden box, ready to give or to keep. Hand wash, dry, wooden boards, whetstone every few months. Knife School has the method.
