Fresh Chimichurri Salsa

Ingredients: 1 cup fresh parsley (finely chopped), 2 tsp dried oregano, 3 garlic cloves (minced), 1/2 tsp red pepper flakes, 1/2 tsp smoked paprika, 3 tbsp apple cider vinegar, 1/2 cup extra-virgin olive oil, sea salt

Method:

  1. Chop: Finely chop parsley by hand (don’t use food processor)
  2. Mix: Combine parsley, oregano, minced garlic, red pepper flakes, paprika in bowl
  3. Acid: Add apple cider vinegar → stir
  4. Oil: Slowly whisk in olive oil until combined
  5. Season: Add salt to taste → let sit 15 mins for flavors to meld

Serve: On grilled meats, roasted vegetables, beans, fish, or as marinade
