Anatomy
The KATA Bunka, part by part.
A VG10 core forged in Seki, a hammered face, and a handle made and mounted in Poland from stabilised maple burl and bog oak, joined by a single copper ring.
The handle is octagonal and symmetrical, for either hand, and the blade carries the line name, engraved by the blacksmith.
Change the handle colour above and the label follows.

The Bunka
The term “Bunka” translates to “culture” in Japanese, reflecting this knife’s role in bridging traditional and contemporary cooking. Its distinctive reverse-tanto tip sets it apart, offering precision for detailed work while keeping the strength for general tasks. The 18cm length gives you enough blade for most jobs while staying nimble and easy to control, particularly for cooks with smaller hands, and the flatter profile excels at push-cutting through vegetables and proteins alike. If you prefer a more all-purpose knife with a slightly curved edge, consider the Santoku instead.

The Blade
KATA blades are handcrafted in Seki, Gifu around a VG10 high-carbon stainless core with a 3-layer construction, a premium steel prized for edge retention and corrosion resistance. At 60–62 HRC the edge holds through regular use with little upkeep, and the hammered finish reduces food sticking as you cut.
Up close
Three details worth a second look.
The reverse-tanto tip
A fine, angled point for scoring, trimming and the small cuts a rounded tip makes awkward.
The hammered finish
Tsuchime dimples along the blade face, so food releases as you cut.
The octagonal handle
Stabilised maple burl with a bog oak ferrule and a copper ring, shaped and mounted in Poland.
Choosing between them
Bunka, Santoku or Nakiri?
All three are KATA: same steel, same handle. The difference is the shape and what it does best.
| Bunka 18cm This one | Santoku 16.5cm | Nakiri 18cm | |
|---|---|---|---|
| Profile | Flat, with a reverse-tanto tip | Shorter and flatter than a gyuto, rounded tip | Flat and rectangular |
| Best for | Everyday prep plus fine tip work | All-round prep in a smaller kitchen | Vegetables, straight-down cuts |

The hands that make it
Seki. Nearly eight hundred years of blade-making.
Seki, in Gifu, has forged blades since the thirteenth century, first swords, then kitchen knives. The workshop we work with there forges five of our six lines.
The handle is made in Poland: a stabilised maple burl body and a bog oak ferrule, meeting the blade at a hand-fitted copper ring in an octagonal profile.

Sakai. Six hundred years of blade-making.
Sakai, in Osaka, is the birthplace of the traditional Japanese kitchen knife, a craft passed down for six hundred years from the methods used to forge samurai swords. KYU is forged there by a master blacksmith whose family has been at this work since 1927. We make his blades under the name Sakai Kyuba.
The steel is AUS10, folded into 46 hammered Damascus layers and hardened to HRC 62. Each blade passes through around two hundred and twenty steps over roughly three months; the hammering, finishing and sharpening are done by hand.
