Pearl Couscous Salad with Grilled Salmon & Mint-Lime Dressing

Ingredients: 200g pearl couscous, 100g radishes (sliced), 1 cucumber (deseeded, half-moons or rounds), 1 green apple (half moons or matchsticks), 200g grilled salmon (cooled, flaked, seasoned with pepper, salt and dry garlic), 150g buttermilk or greek yoghurt, 1 lime (zested + juiced), 10g chives (optional), 10g mint,1 tbsp Dijon mustard, extra fresh mint for garnish, 3 tbs olive oil

Method:

  1. Cook: Pearl couscous per pack instructions → drain + rinse cold → set aside
  2. Make dressing: Mix buttermilk/yoghurt, lime zest + juice, chives, mint, mustard in pan → season well
  3. Combine: Add couscous, radishes, cucumber, apple, flaked salmon to dressing, olive oil → mix well → check seasoning
  4. Serve: Spread on platter → garnish with fresh chopped mint
